Butternut Squash Raviolis

When you see butternut squash for sale at your local supermarket, then it's time to make raviolis. This recipe is incredibly delicious, but requires a little bit of your time! One of our favorite meal for a family dinner. 

Step 1: Turn the oven to 375 degrees Fahrenheit. Prepare a baking sheet with parchment paper. Chop your squash and season with salt and pepper, and sage. (For additional flavor, add other vegetables of your choice to be mixed with the squash. We enj…

Step 1: Turn the oven to 375 degrees Fahrenheit. Prepare a baking sheet with parchment paper. Chop your squash and season with salt and pepper, and sage. (For additional flavor, add other vegetables of your choice to be mixed with the squash. We enjoy adding onion, fennel, carrots, and/or parsnips.)  Roast for 40 minutes. 

Step 2: While the veggies are roasting, make your pasta dough. In a mixer (or by hand), mix in unbleached flour, eggs, oil. Then, using a pasta machine, roll your dough to desired thinness. Step 3: Now that your dough is done, make your puree. …

Step 2: While the veggies are roasting, make your pasta dough. In a mixer (or by hand), mix in unbleached flour, eggs, oil. Then, using a pasta machine, roll your dough to desired thinness. 
Step 3: Now that your dough is done, make your puree. In a chopper/blender, blend the vegetables with a little bit of water to make desired puree consistency. Add shredded mozzarella cheese to the puree. Voila, you have the dough and puree. 

Step 4: Make raviolis. You can use a ravioli maker (aluminum mold) or ravioli stamp, or knife. Lay one pasta sheet flat, and add about 1 tsp. of puree for each ravioli. Then get another pasta sheet, that you coat with egg, and lay that on top. The e…

Step 4: Make raviolis. You can use a ravioli maker (aluminum mold) or ravioli stamp, or knife. Lay one pasta sheet flat, and add about 1 tsp. of puree for each ravioli. Then get another pasta sheet, that you coat with egg, and lay that on top. The egg acts like your glue, and helps keep your dough sealed tightly! 

Step 5: Cook your pasta! Bring to a boil a big pot of water. Once boiled, add raviolis and cook for about 5 minutes (the water should boil one more time).
