Healthy Pea Soup
For once a pea soup that everyone will love!
Garnish it with bacon and some heavy cream, or keep it healthy with some fresh mint or extra peas, again this is the perfect soup for two opposites.
Ingredients:
2 shallots
10 oz fresh English peas
3 yellow baby dutch potatoes
1 tbsp olive oil
1 tbsp butter
3 cups chicken broth (or vegetable broth)
1/4 cup heavy cream (optional)
Instructions:
1. In a medium saucepan, warm oil and butter, and add the chopped shallots. Cook until shallots are tender, about 3-4 minutes.
2. Add peas and potatoes (peeled, and cut in 4). Stir for a few minutes.
3. Add the broth to the vegetables, bring it to a boil, and after let it simmer for 15 minutes, covered.
4. Pour all vegetables, and 3/4 of the liquid (broth) from the saucepan into a blender, or VITAMIX (best option for creaminess and texture). Depending on the desired texture for the soup, you will add the remaining broth or/and add heavy cream for richness. Season with salt and pepper.
