Cold Cucumber Soup
When it's a hot summer day, and you are not tempted to eat much, what's better than a cold, refreshing soup, rich in vegetables and vitamins! Here is our cucumber soup inspired by Curtis Stone's Cucumber Gazpacho. We just felt we had to modify a few things to make it our own, A French Bite's soup, and the flavor is incredible.
Ingredients:
2 English cucumbers
2 slices of Ciabatta bread
1 cup crème fraiche
1 ½ cup of milk
2 tbsp. lemon juice
2 tbsp. red vinegar
1 handful of arugula
2 tbsp. olive oil
bunch of cilantro
Instructions:
1. Soak bread in the milk.
2. Pour all ingredients in blender (preferably in a Vitamix, or soup blender). Process until desired texture (smooth and velvety).
3. Season with salt and pepper.
