Red Berry Tart
You will read through the recipe and quickly realize where the inspiration came from! Yes, it's the key lime pie. A perfect combination of sweetness and sour. Now, it's the tart flavor from the red berries replacing the sour taste of the limes. This tart is slightly sweeter but extremely tasty:) Recipe below includes the how-to-do video.
Serves: 6 ppl
Ingredients:
Crust:
1 individual wrapped package of graham crackers
5 tbsps butter
1/3 cup sugar
Filling:
3 egg yolks
1 can of 140z condensed milk
1 16oz bag of frozen berries
1 tbsp lemon juice
1/2 tsp lemon zest
Instructions:
Make the Coulis
Step 1: In a medium saucepan, add frozen berries. Cook for 7-10 min.
Step 2: Strain berries/juice to remove all seeds into a mixing bowl.
Step 3: Add lemon zest, and lemon juice. Stir all together, and let it cool.
Make the Crust:
Step 4: Pre-heat the oven to 350 degrees Fahrenheit.
Step 5: In a food processor, add graham crackers, sugar, and melted butter. Mix altogether, until well blended and smooth.
Step 6: Press the graham cracker mix into an 8-inch baking pan. Make sure you press on the sides as well.
Step 7: Cook the crust for 8 min.
Make the filling:
Step 8: Meanwhile, add egg yolks to a mixing bowl. Beat egg yolks until pale yellow, for about 5 min.
Step 9: Add condensed milk, slowly, into the mixing bowl. Beat for an additional 4 min.
Step 10: Now, add 2/3 cup of your cooled coulis (berries juice) into the mixing bowl. Mix (on the lowest power) for just a few seconds, until combined.
Step 11: Take your cooked crust, and pour filling.
Step 12: Using the remainder coulis, make designs, using the tip of knife or toothpick.
Step 13: Bake in your preheated oven for 10 min.
Step 14: Once cooled, freeze your tart. Keep it for at least 2 hours, so it can set.
Note: Remove 10 min from freezer before serving.
