Barley Spinach Bowl
Bowls are becoming more and more popular for a reason! They are a good portion control. This specific bowl is your ultimate healthy intake for a meal. You basically add a carbohydrate component, then at least one vegetable component, and top it with a poached egg! It's that simple.
Serves: 2ppl
Ingredients:
1 cup of Barley (Quick Barley from Quaker)
1 small box of fresh spinach
2 large organic eggs
Fresh basil
1 tbsp of butter
1 tsp of olive oil
Instructions:
1. Prepare and cook barley according to the package instructions.
2. In a pan under medium heat, add 1 tbsp of butter, and cook 3/4 of the spinach. Season with salt and pepper.
3. Add barley to the spinach and leave it for 5 minutes on low heat for more flavor.
4. Meanwhile, in a medium sauce pan, boil some water for the poached eggs.
5. Crack the eggs gently into the boiled water and cook them for about 5 minutes. With a spoon, gently stir egg so its stays together (Again, timing depends on how soft you want the yolk).
6. Take out a bowl, and lay a “bed” of of your fresh spinach. Add cooked barley, and spinach. And delicately add the poached egg on top.
7. Drizzle some olive oil (if desired) and a pinch of thinly sliced basil.
Note: We use a poached pan to make the poached eggs, and the result are great. You can't mess it up.
Also, if you do have extra time, we would recommend the pearl barley from Bob's Red Mill. It takes about 50 min to cook the barley, but it's worth it!
